Easy Kale Salad

If you know me, you know I LOVE to make a good, delicious salad. It's my favorite thing to make, to eat & to bring to any social gathering. The number one salad I get asked for the recipe is my 'easy kale salad', so I thought it was about time that I took the time to share it with you all, too!

WHAT YOU WILL NEED:
- 1 bag of Organic Chopped Kale (I used the Wholefoods one pictured below, however Trader Joes also has a great one, too)
- Organic Apple Cider Vinegar
- Organic Lemon Juice
- Organic Olive Oil
- Nutritional Yeast
- Hemp hearts
- Chile Lime Seasoning (I got mine from Trader Joes)
- Any type of good salt such as Himalayan, Celtic, Maine Made Sea Salt
- A few Green Onions
- 1 Avocado
- Handful of Cherry Tomatoes

OPTIONAL TO ADD :
- Pumpkin & Sunflower Seeds
- Microgreens

DIRECTIONS :
You will notice that I am giving you the directions for this salad 'loosely' & I am doing this on purpose. One of the BEST parts of this salad is how EASY it is to put together. You really do NOT need to measure anything out & you can also easily add more to it (like cucumbers, beets, etc) and it will still taste amazing. It's such a #WINWIN. So let me walk you through it real quick.

1.You will want to throw a BUNCH of the chopped kale into a BIG bowl. I usually make at least half the bag because the other beauty of this salad is that it definitely lasts into the next day & doesn't get soggy.

2. Drizzle a dash of lemon juice & olive oil, & a couple splashes of organic apple cider vinegar.

3.Throw in a generous amount of hemp hearts & season a bit with nutritional yeast, a good salt (ie. Celtic, Redmond, Himalayan), as well as a couple dashes of a Chile Lime seasoning.

4. Dice up some green onions, cherry tomatoes & an avocado.

5. Mix it all up & make sure it's well marinated/coated!

6. (Optional to add) Sprinkle in some pumpkin & sunflower seeds for an added protein crunch, as well as some microgreens for added nutritional boost!

Lastly, if time permitting, I cover it & place in the fridge to let it all marinate a bit BUT it is still totally ready to eat & delicious even if you don't have time for that step!
